200g (7oz) feta cheese (block)

300g (10.5oz) pasta (such as penne or rigatoni)

2 cups cherry tomatoes, halved

1/4 cup extra-virgin olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large ovenproof baking dish, add the halved cherry tomatoes, minced garlic, oregano, red pepper flakes, salt, and black pepper. Drizzle with olive oil and mix well.

      Add Feta: Place the block of feta cheese in the center of the tomato mixture. Drizzle a little more olive oil on the feta and sprinkle with additional salt and pepper.

        Bake: Bake in the preheated oven for 25-30 minutes, or until the tomatoes are bursting and the feta is golden and soft.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to the package instructions in salted water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

            Mix it Up: Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and tomatoes together to create a creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

              Combine: Add the drained pasta to the sauce and stir to combine, ensuring all the pasta is well coated.

                Serve: Serve the baked feta pasta hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese.
