Ingredients

1 lb ground chicken

1/2 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably Italian-seasoned)

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 cup fresh parsley, chopped

1 cup marinara sauce (for serving)

Olive oil spray

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Mix the Ingredients: In a large mixing bowl, combine the ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, dried oregano, salt, pepper, and chopped parsley. Mix thoroughly until well combined but be careful not to overwork the mixture.

Form Meatballs: Using your hands, scoop out about 2 tablespoons of the mixture and roll it into a ball. Place the meatball onto the prepared baking sheet. Repeat the process until all the mixture is formed into meatballs, spacing them about 1 inch apart.

Bake the Meatballs: Lightly spray the tops of the meatballs with olive oil to promote browning. Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and golden brown in color.

Serve: Once cooked, remove the meatballs from the oven and allow them to cool slightly. Serve the baked chicken ricotta meatballs topped with marinara sauce, garnished with additional parsley or grated Parmesan if desired.
