Baked Chicken Ricotta Meatballs

Ingredients
  

1 lb ground chicken

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably Italian seasoned)

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup marinara sauce (plus extra for serving)

Fresh basil leaves, for garnish

Olive oil spray

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil spray.

    Mix the Ingredients: In a large bowl, combine the ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper. Mix gently until all ingredients are well combined, but be careful not to overmix.

      Form the Meatballs: With wet hands (to prevent sticking), shape the mixture into meatballs about the size of a golf ball (around 1.5 inches in diameter). Place the meatballs on the prepared baking sheet, ensuring they are spaced apart.

        Bake the Meatballs: Lightly spray the tops of the meatballs with olive oil, then bake in the preheated oven for 20-25 minutes or until they are cooked through and golden brown on top.

          Add Marinara Sauce: Once the meatballs are done, remove them from the oven and pour marinara sauce over them in a single layer. You can also add some extra Parmesan cheese on top if desired.

            Broil for Finish: Switch your oven to broil. Place the meatballs back in the oven for an additional 2-3 minutes to warm the sauce and melt the cheese slightly. Keep a close eye on them to prevent burning.

              Serve: Remove from the oven, let cool for a couple of minutes, and garnish with fresh basil leaves. Serve hot with extra marinara sauce on the side, over pasta, or in a sub sandwich.
