2 large russet potatoes

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

6 slices of bacon, cooked and crumbled

1/4 cup green onions, chopped

1/2 cup sour cream (optional for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Wash and scrub the potatoes thoroughly, then slice them into thin wedges or fries, about 1/4 inch thick.

      In a large bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

        Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

          While the fries are baking, cook the bacon until crispy, then crumble it into small pieces. Set aside.

            Once the fries are done, remove them from the oven and sprinkle the shredded cheddar cheese evenly over the top. Add the crumbled bacon on top of the cheese.

              Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and garnish with chopped green onions and fresh parsley. Serve immediately with sour cream on the side if desired.
