2 filet mignon steaks (about 6 ounces each)

4 slices of thick-cut bacon

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh rosemary (for garnish)

Optional: balsamic glaze for drizzling

Instructions
 

Preheat your oven to 425°F (220°C).

    Season the filet mignon steaks generously with salt, pepper, garlic powder, and smoked paprika on both sides.

      Wrap each steak with 2 strips of bacon, securing them with toothpicks if necessary to keep the bacon in place.

        In a cast-iron skillet or oven-safe pan, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped filets. Sear each side for about 3-4 minutes until the bacon is crispy.

          Transfer the skillet to the preheated oven and roast for approximately 8-10 minutes for medium-rare, or until the desired doneness is reached.

            Once done, remove the skillet from the oven and let the steaks rest for about 5 minutes. This allows the juices to redistribute.

              Serve garnished with fresh rosemary and a drizzle of balsamic glaze if desired.
