Ingredients

1 pound ground beef

6 slices of crispy bacon, chopped

1 cup elbow macaroni

1 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/2 cup milk

2 tablespoons butter

1 tablespoon all-purpose flour

1 tablespoon mustard

Salt and pepper to taste

4 large flour tortillas

Optional toppings: lettuce, tomato, pickles, or extra cheese

Instructions

Cook the Macaroni: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Add the flour and stir for about 1 minute to create a roux. Gradually whisk in the milk until smooth. Cook, stirring frequently until the mixture thickens. Stir in the cheddar and mozzarella cheese until melted and creamy. Season with mustard, salt, and pepper.

Combine Mac and Cheese: Add the cooked macaroni to the cheese sauce and stir until thoroughly coated. Set aside.

Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease. Reserve some bacon drippings in the skillet.

Cook the Beef: In the same skillet, with a little bacon drippings left, add the ground beef. Season with salt and pepper. Cook until browned and fully cooked through, breaking it apart with a spatula. Drain excess fat if needed.

Assemble the Wraps: On each tortilla, layer a generous scoop of the mac and cheese, followed by a portion of the cooked beef, and sprinkle over the crispy bacon. Add any optional toppings desired.

Wrap it Up: Fold in the sides of the tortilla and roll tightly, ensuring all the filling is securely inside.

Final Searing (optional): Heat a bit of oil in the skillet over medium heat. Add the wrapped burrito seam-side down and cook until golden brown on all sides, about 2-3 minutes per side.

Serve: Slice the wraps in half and serve hot with your favorite dipping sauce or additional toppings.
