1 pound ground beef (80/20 for best flavor)

Salt and freshly cracked black pepper, to taste

4 slices of sharp cheddar cheese

4 hamburger buns, toasted

1 cup bacon jam (store-bought or homemade)

Leafy romaine lettuce or arugula (optional)

Sliced tomatoes (optional)

Pickles (optional)

Make the Bacon Jam (if making homemade): In a skillet over medium heat, cook 6-8 slices of bacon until crispy. Remove and drain on paper towels. In the bacon fat, sauté 1 diced onion until caramelized, about 10 minutes. Add 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar, and a pinch of black pepper. Cook until thickened. Chop the crispy bacon and mix it back in. Cool before using.

    Prepare the Patties: Preheat your grill or skillet over medium-high heat. In a bowl, season the ground beef with salt and pepper; shape into 4 equal patties, making a small dent in the center of each to prevent puffing during cooking.

      Grill the Patties: Place the patties on the grill or skillet. Cook for about 4-5 minutes on one side, then flip. Add a slice of cheddar cheese to each patty and cook for another 3-4 minutes, until the cheese is melted and the burger reaches your desired doneness.
