Ingredients

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup crumbled cooked bacon (about 5-6 slices)

2-3 jalapeños, seeded and finely chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp salt

1/4 tsp pepper

1 cup breadcrumbs (Panko for extra crunch)

1/4 cup flour for dusting

2 large eggs, beaten

Oil for frying

Instructions

Prepare the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined and creamy.

Form the Balls: Using a tablespoon, scoop out a generous amount of the cheese mixture and roll it into a ball (about 1 inch in diameter). Repeat with the remaining mixture until you have around 16-20 balls. Place them on a parchment-lined baking sheet.

Chill the Balls: Cover the sheet with plastic wrap and refrigerate the cheese balls for at least 30 minutes to firm up. This will make them easier to handle during the breading process.

Set Up Breading Station: In three separate shallow bowls, prepare your breading station: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Cheese Balls: Roll each chilled cheese ball first in flour, ensuring it’s coated evenly, then dip it into the beaten egg, and finally roll it in the breadcrumbs until fully coated. Repeat for all cheese balls.

Fry the Cheese Balls: Heat oil in a large skillet over medium heat (about 350°F or 175°C). Fry the cheese balls in batches, being careful not to overcrowd the pan. Cook them for about 2-3 minutes or until they’re golden brown and crispy on all sides. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Serve: Serve warm with your favorite dipping sauce, such as ranch dressing or a spicy sriracha mayo.
