2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

6 strips bacon, cooked until crispy and crumbled

1/2 cup buttermilk

1/4 cup green onions, finely chopped (optional)

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

      Incorporate Butter: Add the chilled cubed butter into the dry ingredients. Using a pastry cutter or your fingertips, mix until the mixture resembles coarse crumbs.

        Add Cheese and Bacon: Gently fold in the shredded cheddar cheese and crumbled bacon, ensuring they are evenly distributed throughout the flour mixture.

          Mix in Buttermilk: Pour in the buttermilk and mix until just combined. Be careful not to overwork the dough; it should still be slightly sticky.

            Shape the Biscuits: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Fold it over onto itself a couple of times for flakiness, then gently roll it out again to about 1-inch thickness.

              Cut Out Biscuits: Use a biscuit cutter (or a drinking glass) to cut out biscuits. Place them on the prepared baking sheet, close together for soft sides or spaced apart for crispier edges.

                Egg Wash: Beat the egg in a small bowl and brush it over the tops of the biscuits to give them a golden finish.

                  Bake: Bake in the preheated oven for about 12-15 minutes, or until the biscuits are golden brown.

                    Cool and Serve: Remove from the oven and let cool slightly on a wire rack. Serve warm, optionally garnished with additional green onions if desired.
