Ingredients

2 large russet potatoes, scrubbed and peeled

1 cup cooked bacon, chopped

1 cup Italian sausage, casing removed and crumbled

1/2 cup shredded cheddar cheese

1/4 cup cream cheese, softened

1/4 cup sour cream

2 tablespoons green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Potatoes: Place the peeled potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Reduce the heat to medium and cook until tender, about 15 minutes. Drain and let cool slightly.

Prepare the Filling: In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the crumbled sausage and cook until browned, about 5-7 minutes. Add the chopped bacon towards the end to warm it through, then remove from heat.

Mash the Potatoes: In a large bowl, mash the cooked potatoes using a potato masher or fork until smooth.

Mix Ingredients: To the mashed potatoes, add the cream cheese, sour cream, shredded cheddar cheese, green onions, garlic powder, onion powder, and season with salt and pepper. Stir until well combined.

Combine the Mixtures: Gently fold the cooked bacon and sausage into the potato mixture until evenly distributed.

Shape the Loaf: Transfer the potato and meat mixture into a greased loaf pan, pressing down gently to form a compact loaf shape.

Bake: Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the loaf is heated through.

Cool and Serve: Allow the loaf to cool for about 10 minutes before slicing. Garnish with fresh parsley, if desired, and serve warm.
