For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp nutmeg

3 large eggs

1 cup vegetable oil

2 cups peeled, diced apples (about 2 medium apples, preferably Granny Smith)

1 cup chopped pecans

1 tsp vanilla extract

For the Caramel Glaze:

1 cup brown sugar, packed

½ cup unsalted butter

½ cup heavy cream

1 tsp vanilla extract

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the eggs, then add in the vegetable oil and vanilla extract, mixing until smooth.

        Combine Mixtures: Gradually add the wet ingredients into the dry ingredients, stirring just until combined. Do not overmix!

          Add Apples and Pecans: Gently fold the diced apples and chopped pecans into the batter until evenly distributed.

            Bake the Cake: Pour the batter into the prepared baking pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

              Prepare the Caramel Glaze: While the cake is baking, prepare the caramel glaze. In a medium saucepan, combine brown sugar, butter, and salt over medium heat. Stir until the butter is melted and sugar is dissolved.

                Add Cream and Vanilla: Gradually whisk in the heavy cream and let it simmer for about 3 minutes until the glaze thickens slightly. Remove from heat and stir in the vanilla extract.

                  Cool and Glaze: Once the cake is out of the oven, allow it to cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack. Drizzle the warm caramel glaze over the cooled cake, allowing it to soak in a bit.
