2 medium-sized apples (Granny Smith or Honeycrisp), peeled and finely chopped

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/2 cup granulated sugar (for coating)

Oil, for frying

Prepare the Apples: In a medium bowl, combine the chopped apples with 1 tablespoon of sugar and a pinch of cinnamon. Set aside to let the apples release some moisture.

    Make the Batter: In a large bowl, whisk together the flour, 1/4 cup granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, whisk the milk, egg, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the prepared apples.

      Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil to 350°F (175°C).

        Fry the Bites: Using a tablespoon, drop spoonfuls of the mixture into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until they become golden brown.

          Drain and Coat: Remove the fritter bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While they are still warm, roll them in additional granulated sugar to coat.

            Serve: Let the apple fritter bites cool slightly before serving. Enjoy with a drizzle of caramel or a sprinkle of powdered sugar if desired!
