Ingredients
  

2 large apples (e.g., Granny Smith or Honeycrisp), peeled and diced

1 ½ cups all-purpose flour

½ cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp ground cinnamon

¼ tsp nutmeg

½ tsp salt

2 large eggs

¾ cup milk

1 tsp vanilla extract

½ cup chopped walnuts (optional)

Oil for frying (canola or vegetable)

Powdered sugar for dusting

Instructions
 

In a bowl, mix the diced apples with 1 tablespoon of granulated sugar and set aside to macerate for about 10 minutes while preparing the batter.

    In a large mixing bowl, combine flour, remaining sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk until well blended.

      In a separate bowl, beat the eggs, then add milk and vanilla extract. Mix well.

        Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.

          Gently fold in the diced apples and walnuts (if using) until evenly distributed throughout the batter.

            In a heavy-bottomed pot, heat about 2 inches of oil to 350°F (175°C).

              Using a tablespoon or small cookie scoop, drop batter into the hot oil in small batches, frying about 4-5 fritter bites at a time. Fry for about 2-3 minutes on each side, or until golden brown.

                Use a slotted spoon to transfer the fritter bites to a paper towel-lined plate to drain excess oil.

                  While still warm, dust the fritters with powdered sugar. Serve immediately or let cool slightly before enjoying.
