2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

1 cup all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1 large egg

1/2 cup milk

1 tsp vanilla extract

1/2 cup powdered sugar (for glaze)

2 tbsp milk (for glaze)

Oil for frying (canola or vegetable oil)

Instructions
 

Prepare the Apples: Start by peeling, coring, and dicing the apples into small pieces. Set aside.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the egg, then add in the milk and vanilla extract. Mix until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold in the diced apples until evenly dispersed within the batter.

          Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil over medium heat. You can test if the oil is hot enough by dropping in a small bit of batter; it should sizzle and rise to the surface.

            Fry the Bites: Using a tablespoon or small cookie scoop, carefully drop spoonfuls of the batter into the hot oil, leaving space between each bite. Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

              Prepare the Glaze: In a small bowl, whisk together the powdered sugar and milk until smooth. Adjust the consistency as needed by adding more milk or powdered sugar.

                Glaze the Bites: Once the fritter bites have cooled slightly, drizzle the glaze over them or dip each bite into the glaze for a sweet finish.
