3 cups all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 ½ cups apples, peeled and chopped (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (or as needed)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 4-5 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          Combine Mixtures: Gradually add the dry ingredients to the butter mixture, mixing just until combined. Be careful not to overmix.

            Fold in Apples and Nuts: Gently fold in the chopped apples and walnuts or pecans if using.

              Pour Batter: Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

                Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                  Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                    Prepare Cream Cheese Frosting: While the cakes are cooling, beat the softened cream cheese and butter together in a mixing bowl until smooth. Gradually add powdered sugar and mix until well combined. Stir in the vanilla extract and add milk as needed to reach desired consistency.

                      Frost the Cake: Once the cakes are completely cool, place one layer on your serving plate. Spread a layer of cream cheese frosting on top, then place the second cake layer on top. Frost the top and sides of the cake with the remaining cream cheese frosting.
