1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons pure vanilla extract

2 ½ cups all-purpose flour

1 cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 cup semi-sweet chocolate chips

1 cup Andes mint chocolates, chopped (plus extra for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes.

      Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until fully combined.

        In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

            Fold in the semi-sweet chocolate chips and chopped Andes mint chocolates until evenly distributed throughout the dough.

              Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving a few inches of space between each cookie as they will spread.

                Bake for 10-12 minutes or until the edges are set but the centers are still slightly soft.

                  Remove from the oven and immediately top each cookie with a piece of Andes mint chocolate for extra flavor.

                    Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
