1 lb breakfast sausage (spicy or mild, your choice)

1 medium onion, chopped

1 bell pepper, chopped (any color)

6 large eggs

2 cups milk

4 cups cubed day-old bread (preferably white or whole wheat)

2 cups shredded cheddar cheese (or a blend of your favorites)

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage, breaking it apart as it cooks. When browned (about 5-7 minutes), add the chopped onion and bell pepper to the skillet. Sauté until the vegetables are tender, about 3-4 more minutes. Drain excess fat if necessary.

      Mix Eggs and Milk: In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and paprika until well combined.

        Combine Ingredients: Add the cooked sausage mixture to the egg mixture. Fold in the cubed bread and half of the shredded cheddar cheese until everything is evenly mixed.

          Pour into Casserole Dish: Grease a 9x13 inch casserole dish with cooking spray or butter. Pour the mixture into the dish and spread it out evenly. Top with the remaining cheddar cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for another 15-20 minutes, or until the casserole is set and the top is golden brown.

              Serve: Let the casserole cool for a few minutes before slicing. Garnish with fresh chives or parsley if desired. Serve warm.
