Ingredients
  

1 lb large shrimp, peeled and deveined

3 cups cooked jasmine rice (preferably day-old)

2 tablespoons vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup frozen peas and carrots mix

2 green onions, chopped

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 egg, beaten

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Prepare the Shrimp: In a bowl, season the shrimp with a pinch of salt and pepper. Set aside.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Sauté Aromatics: Add the chopped onion and minced garlic to the pan. Sauté until the onion is translucent and fragrant, about 2-3 minutes.

        Cook the Shrimp: Add the shrimp to the pan and cook for 3-4 minutes or until they turn pink and opaque. Remove the shrimp from the pan and set aside.

          Add Vegetables: In the same pan, add the diced red bell pepper and the frozen peas and carrots mix. Stir-fry for about 2-3 minutes until they are tender.

            Combine Rice: Add the cooked jasmine rice to the pan, breaking up any clumps. Mix well with the vegetables.

              Flavor the Rice: Pour in the soy sauce, oyster sauce, and sesame oil. Stir everything together until the rice is evenly coated and heated through.

                Scramble the Egg: Push the rice mixture to one side of the pan. In that empty space, pour the beaten egg and scramble it until fully cooked. Then mix it into the rice.

                  Finish with Shrimp: Add the cooked shrimp back into the pan and toss everything together. Adjust seasoning with salt and pepper to taste.

                    Garnish and Serve: Remove from heat, and fold in the chopped green onions. Garnish with fresh cilantro before serving.
