Ingredients

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

8 small corn or flour tortillas

1 cup shredded cabbage

1 avocado, sliced

Lime wedges, for serving

Instructions

Marinate the Shrimp: In a medium bowl, soak the shrimp in buttermilk for about 30 minutes. This helps to tenderize the shrimp and adds flavor.

Prepare the Coating: In a separate bowl, mix together the panko breadcrumbs, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. This mixture will give the shrimp its crispy crust.

Coat the Shrimp: Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp in the panko mixture, ensuring they're fully coated. Place the coated shrimp on a plate.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Shrimp: Lightly spray the air fryer basket with cooking spray. Place the shrimp in a single layer in the basket (you may need to do this in batches). Lightly spray the tops of the shrimp with cooking spray. Cook for 8-10 minutes, flipping halfway through, until the shrimp are golden brown and crispy.

Make the Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, and sriracha. Mix well until smooth and adjust seasoning to taste.

Assemble the Tacos: Warm the tortillas by briefly placing them on a hot skillet or microwaving them. For each taco, add a layer of shredded cabbage, followed by a few pieces of crispy shrimp. Drizzle with the bang bang sauce and top with avocado slices.

Serve: Squeeze fresh lime juice over the tacos for extra zest. Serve with additional lime wedges on the side.
