1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1/2 cup mayonnaise

1 tablespoon sweet chili sauce

1 tablespoon sriracha (optional, for extra heat)

1 tablespoon lime juice

Chopped green onions and lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a medium bowl, pour the buttermilk over the shrimp. Allow them to soak for at least 30 minutes to 1 hour in the refrigerator. This will tenderize the shrimp and add flavor.

    Prepare the Coating: In a shallow dish, combine the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. In another bowl, place the panko breadcrumbs.

      Coat the Shrimp: Remove the shrimp from the buttermilk, letting any excess drip off. Dredge each shrimp in the flour mixture, shaking off the excess, then dip in the panko breadcrumbs to coat evenly.

        Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Air Fry the Shrimp: Place the breaded shrimp in the air fryer basket in a single layer, making sure they are not overcrowded. Lightly spray the shrimp with cooking spray for extra crispiness. Air fry at 400°F (200°C) for 8-10 minutes until golden brown and crispy, shaking the basket halfway through to ensure even cooking.

            Make the Bang Bang Sauce: While the shrimp are cooking, whisk together the mayonnaise, sweet chili sauce, sriracha (if using), and lime juice in a bowl until well combined.

              Serve: Once the shrimp are done, transfer them to a serving platter. Drizzle the Bang Bang sauce over the shrimp or serve it on the side for dipping. Garnish with chopped green onions and serve with lime wedges.
