Ingredients

For the Cupcake Base:

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup milk

1 tsp vanilla extract

1 ½ tsp baking powder

¼ tsp salt

For the Cheesecake Filling:

8 oz cream cheese, softened

¼ cup granulated sugar

1 large egg

1 tsp vanilla extract

1 ½ cups fresh strawberries, chopped

For the Strawberry Topping:

1 cup fresh strawberries, sliced

2 tbsp granulated sugar

1 tsp lemon juice

For the Whipped Cream Frosting:

1 cup heavy whipping cream

¼ cup powdered sugar

1 tsp vanilla extract

Instructions

Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

    Make the Cupcake Batter:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the eggs, one at a time, mixing well after each addition. Stir in the milk and vanilla extract.

          - In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

            Prepare the Cheesecake Filling:

              - In another bowl, beat the cream cheese and sugar until smooth and creamy.

                - Add the egg and vanilla and mix until fully incorporated. Fold in the chopped strawberries.

                  Assemble the Cupcakes:

                    - Fill each cupcake liner about ⅓ full with the cupcake batter. Then, add a generous tablespoon of the cheesecake filling on top of the batter. Finally, top with more batter until each liner is about ¾ full.

                      Bake the Cupcakes:

                        - Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely in the pan.

                          Prepare the Strawberry Topping:

                            - In a small bowl, combine the sliced strawberries, sugar, and lemon juice. Let sit for about 10-15 minutes to allow the strawberries to macerate and release their juices.

                              Make the Whipped Cream Frosting:

                                - In a chilled bowl, whip the heavy cream until it begins to thicken. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

                                  Assemble the Cupcakes:

                                    - Once the cupcakes are cool, pipe or spread the whipped cream frosting on top. Garnish with the macerated strawberries for a beautiful finish.

                                      Serve:

                                        - Enjoy your delightful strawberry cheesecake cupcakes chilled or at room temperature!
